Winemaking process
Harvest period: Sangiovese first week in October, Sagrantino last week in October
Maceration: on the skins for approximately 12 days for Sangiovese, pumpovers twice a day
Fermentation: in 50 hl stainless steel vats at 25°C
Ageing: the grapes are blended then placed in 500-litre lightly toasted oak barrels for 6 months then in 25-hl oak barrels for 12 months. Naturally decanted in cement vats for 3 months then in bottles for at least 6 months.

Taste: well-orchestrated, firmly structured, dry and lingering
